I am what I call a "coffee snob." I cannot stand Folgers coffee along with other cheap imitations (well, I guess it’s not imitation coffee but you get what I’m saying). Plus, it’s almost summertime…sweet sweet summertime. The perfect pairing for a summer morning? Iced coffee. And if you want an even better version of iced coffee you should try Food52’s Magical Coffee. I love it because there are sweet hints of cinnamon and if you’ve ever been to Mexico and had coffee you’ll definitely be having flashbacks. I have been making this for a few gatherings with my friends and they all rave about it! First things first, Ingredients for the Coffee Base:
2/3 cups of coarsely ground coffee
3 cups of water
1 tsp. cinnamon
3 Tbs. dark brown sugar
Coffee base serves 2 – 4. Can be doubled.
1. Once you have all of your ingredients mixed in a quart jar, put the jar in your fridge overnight or for eight to 12 hours. I re-purposed an empty applesauce jar.
2. After a good, long soak, pour the chilled coffee through a fine strainer into another container. If you don’t have a fine kitchen strainer you can use a cheese cloth.
3. Then pour the filtered coffee back into the quart jar to use for later OR you can pour it into your favorite tumbler with ice, add as much or as little creamer as you wish. Mmmmmmmmmm…perfection!
